Where it comes from

It appeared in Brazil around a 1945 election campaign for a candidate nicknamed Brigadeiro, when supporters sold the fudgy sweet as a quick, cheap treat to raise campaign funds, and the name stuck to the candy itself.

What cooks argue about

Cooks argue over how long to cook the mixture, since a shorter cook gives a softer, spoonable brigadeiro while a longer cook gives one firm enough to roll and hold its shape.
