Skewered picanha, sausage, and chicken are salted with coarse salt and grilled over wood coals, then sliced tableside straight off the spit.

Where it comes from

Churrasco grew out of cattle ranching in Rio Grande do Sul, where gauchos grilled whatever cut was on hand over open fire. The rodizio restaurant format later turned that ranch meal into continuous tableside service.

What cooks argue about

The fight is over salt: a light coating just before the fire versus a longer dry cure, and how close the meat sits to the coals, for a hard crust or slow rendering.
