Fruit Salad
Chopped apple, strawberry, pineapple, and grapes tossed together, a cold mix eaten for the contrast of textures as much as the sweetness.
Where it comes from
Combining whatever fruit was on hand made it a stretch dish for potlucks and buffets, cheap to assemble in volume and easy to scale for a crowd.
What cooks argue about
The fight is over dressing: tossing the fruit with citrus juice to slow browning and add tartness, or leaving it plain, which tastes purer but browns and weeps faster.
