Gingerbread Cookie
Flour, molasses, ground ginger, and cinnamon are worked into a stiff dough, rolled flat, cut into shapes, and baked until firm enough to hold a decoration.
Where it comes from
Gingerbread spread through medieval Europe once ginger and molasses became available through spice trade routes, and shaping the dough into figures became common at fairs and later around Christmas.
What cooks argue about
The main argument is thickness: rolled thin gives a cookie that snaps cleanly for decorating, while rolled thicker stays chewier but is harder to cut into clean shapes.
