Where it comes from
Halo-halo, which translates to mix mix, grew out of Japanese-influenced shaved ice desserts sold in the Philippines in the early 20th century, layered with local additions like ube and jackfruit over time.
What cooks argue about
Eaters argue over whether to mix everything before the first bite, which the name instructs, or eat it layer by layer from the top so the ice doesn't melt into the beans too fast.
