Kare Kare

Oxtail and vegetables braised for hours in a thick peanut sauce, usually served with a side of fermented shrimp paste stirred in at the table for salt.

Where it comes from

The stew's oxtail-and-tripe base points to a dish built to use cheap cuts, and its peanut sauce sets it apart from the coconut- or tomato-based stews found elsewhere in the Philippines.

What cooks argue about

Cooks argue over thickening the sauce: ground toasted rice for a nuttier, more traditional base, or peanut butter alone, which is faster but can turn the sauce sweeter than intended.
