Where it comes from
Pumpkins were a crop early American colonists could grow reliably, and canned pumpkin puree, introduced commercially in the early twentieth century, turned a once-laborious pie into one nearly anyone could bake from a can.
What cooks argue about
Cooks argue over blind baking the crust first to keep it from turning soggy under the wet filling, against pouring the filling into a raw crust and baking both together.
