Basque Burnt Cheesecake
A crustless cheesecake baked at high heat until the top turns dark and almost burnt while the center stays loose and barely set, more like a custard than a firm cake.
Where it comes from
The cake was created at a bar called La Vina in San Sebastian in the 1990s, where the deliberately scorched top set it apart from traditional baked cheesecakes, and it later spread internationally.
What cooks argue about
The core technical fight is how far to push the bake: enough char on top for a bitter contrast against the sweet custard, without tipping into a center that never sets at all.
