15 ingredients

11 steps

What you need

  • 600 g (1 1/4 lb) baby potatoes, about 16, similar size
  • vegetable oil, for deep frying
  • 2 1/2 tsp Kashmiri chili powder
  • 1/4 tsp asafoetida
  • 2 tbsp ghee
  • 2 tbsp mustard oil, or more ghee
  • 2 bay leaves
  • 4 green cardamom pods, lightly crushed
  • 3 cloves
  • 3 cm (1 in) cinnamon stick
  • 200 g (3/4 cup) plain yogurt, whisked smooth, at room temperature
  • 1 1/2 tbsp ground fennel seeds
  • 1 1/2 tsp ground dried ginger, sonth
  • 1 tsp salt, plus more for the boiling water
  • 1/2 tsp garam masala

Method

Restated from the original video

  1. 1

Boil the potatoes in well-salted water until a knife meets slight resistance in the centre, 8-10 min. Drain and cool.

  2. 2

Peel the potatoes and prick each one all over with a fork or toothpick so the gravy can soak in.

  3. 3

Heat 5 cm (2 in) of oil in a deep pan to 175 °C (350 °F). Fry the potatoes in batches until the outsides turn deep golden, 6-8 min. Drain on paper towels.

  4. 4

Stir the chili powder and asafoetida into 4 tbsp water to make a smooth red paste.

  5. 5

Heat the ghee and mustard oil in a heavy pan over medium heat until the mustard oil just starts to smoke, then lower the heat.

  6. 6

Add the bay leaves, cardamom, cloves and cinnamon and let them sizzle for 20 seconds.

  7. 7

Pour in the chili paste and stir for 30 seconds without letting it scorch.

  8. 8

Take the pan off the heat and stir in the yogurt a spoonful at a time so it does not split. Return to low heat and cook, stirring, for 2 min.

  9. 9

Add the fennel, dried ginger, salt and 500 ml (2 cups) water. Bring to a boil, stirring.

  10. 10

Add the fried potatoes, cover tightly and simmer on low heat, stirring now and then, until the gravy thickens and oil pools on the surface, 20-25 min.

  11. 11

Sprinkle in the garam masala, cover again and rest off the heat for 2 min. Serve hot with steamed rice.
