6 ingredients
8 steps
What you need
- 200 g (1 1/2 cups) all-purpose flour, sifted
- 150 g (2/3 cup) unsalted butter
- 30 g (3 tbsp) pine nuts
- 200 g (1 cup) granulated sugar
- 200 ml (3/4 cup plus 1 tbsp) whole milk
- 200 ml (3/4 cup plus 1 tbsp) water
Method
Restated from the original video
- 1
Sift the flour into a bowl so there are no lumps.
- 2
Melt the butter in a wide, heavy pan over medium-low heat.
- 3
Add the flour and pine nuts. Stir constantly with a wooden spoon until the mixture turns a deep golden pink and smells nutty, 15-20 min. Keep the heat gentle so the flour never darkens at the edges.
- 4
While the flour browns, warm the milk, water and sugar in a separate pot over low heat until the sugar dissolves. Keep it hot.
- 5
Stand back and pour the hot milk mixture into the browned flour in one go. It will spit and bubble hard for a few seconds.
- 6
Stir vigorously until smooth, then keep cooking over low heat, stirring, until the halva thickens and pulls away from the sides of the pan, 4-6 min.
- 7
Cover the pan, take it off the heat and leave it for 5 min so the halva absorbs the last of the moisture.
- 8
Shape the halva into ovals with two spoons and set them on a serving plate. Serve warm.
