What you need
- 600 g (1 1/4 lb) boneless skinless chicken breasts, cut into 3 cm (1 1/4 in) cubes
- 2 red bell peppers, seeded, cut into 3 cm (1 1/4 in) squares
- 1 large red onion, cut into 3 cm (1 1/4 in) pieces, layers separated
- 3 tbsp olive oil, plus a little for the grill
- 2 tbsp lemon juice
- 3 cloves garlic, grated
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- 1 1/4 tsp salt
- 1/2 tsp black pepper
- 8 wooden skewers, 25-30 cm (10-12 in) long
Method
Restated from the original video
- 1
Soak the wooden skewers in water for 30 min so they do not scorch on the grill.
- 2
In a large bowl, stir together the olive oil, lemon juice, garlic, smoked paprika, oregano, red pepper flakes, salt and black pepper.
- 3
Add the chicken and turn it until every piece is coated. Cover and refrigerate for at least 30 min and up to 4 hours.
- 4
Thread the chicken, peppers and onion onto the skewers in turn, leaving a small gap between pieces so the heat reaches all sides.
- 5
Heat a grill or grill pan to medium-high and wipe the grates with a little oil.
- 6
Grill the skewers, turning every 3 min, until browned at the edges and the chicken reaches 74 °C (165 °F) inside, 10-14 min.
- 7
Rest the skewers for 3 min, then serve hot.
