7 ingredients
9 steps
What you need
- 200 g (7 oz) dried soba noodles
- 200 ml (3/4 cup) dashi
- 40 ml soy sauce, regular Japanese (koikuchi)
- 40 ml mirin
- 1 sheet nori, toasted
- 2 scallions, thinly sliced
- 1 tsp wasabi paste
Method
Restated from the original video
- 1
Bring the dashi, soy sauce and mirin to a boil in a small pan and cook for 1 min.
- 2
Pour the sauce into a jug and let it cool, then refrigerate for at least 20 min.
- 3
Cut the nori into thin strips with scissors.
- 4
Boil plenty of unsalted water. Cook the soba for 1 min less than the packet says, usually 4-5 min.
- 5
Drain the noodles and rinse under cold running water, rubbing them gently, until no slippery starch remains.
- 6
Chill the noodles in a bowl of water and ice for 1 min, then drain well.
- 7
Pile the noodles on a plate or bamboo tray and scatter the nori on top.
- 8
Pour the cold sauce into two small cups. Serve with the scallions and wasabi on the side, to stir into the sauce.
- 9
Dip a few noodles at a time into the sauce and eat.
