11 ingredients
10 steps
What you need
- 300 g (1 1/2 cups) cooked short-grain rice, warm, lightly salted
- 2 sheets nori, full size
- 3 large eggs
- 2 scallions, thinly sliced
- 1 tsp sugar
- 1 tsp soy sauce
- 1 tsp vegetable oil
- 4 slices cooked ham, thin
- 2 leaves lettuce, dry, ribs trimmed
- 2 tsp mayonnaise
- 1 pinch salt, plus extra for wetting hands
Method
Restated from the original video
- 1
Beat the eggs with the scallions, sugar, soy sauce and a pinch of salt.
- 2
Heat the oil in a 20 cm (8 in) nonstick frying pan over medium-low heat. Pour in the eggs and cook until the top is just set, 2-3 min.
- 3
Flip the omelet and cook for 30 seconds more, until no liquid egg remains. Slide it onto a board and cool slightly, then cut into 2 squares about 10 cm (4 in) wide.
- 4
In the same pan, warm the ham for 30 seconds per side until lightly browned. Set aside.
- 5
Lay a 30 cm (12 in) square of plastic wrap on the counter and place a nori sheet on it with one corner pointing at you and the shiny side down.
- 6
Wet your hands with salted water. Pat a quarter of the rice into a 10 cm (4 in) square in the middle of the nori.
- 7
Layer on a lettuce leaf, 2 slices of fully cooked ham and 1 tsp of the mayonnaise, then an omelet square. Top with another quarter of the rice, pressed flat.
- 8
Fold the nori corners over the filling one at a time, left, right, bottom, top, overlapping them to seal like an envelope.
- 9
Wrap tightly in the plastic and set it seam side down. Make the second sandwich the same way.
- 10
Rest for 10 min so the nori softens and sticks. Cut each through the plastic with a wet knife and peel away the wrap.
