Method
Restated from the original video
- 1
Rinse the beans, cover them with plenty of cold water and leave them to soak for 12 hours.
- 2
Drain and rinse the beans, then put them in a pressure cooker and cover them generously with fresh water.
- 3
Lock the lid, bring to pressure and cook for 20-30 min. Let the pressure drop, then open and check that the beans crush easily between two fingers.
- 4
Melt the lard in a small frying pan over medium heat. Add half the onion and half the garlic and fry until soft and lightly golden, 4-5 min.
- 5
Scoop a ladle of cooked beans into the frying pan and mash them into the onion and garlic with the back of a spoon.
- 6
Tip the mashed mixture back into the pot with the bay leaf and a good pinch of salt.
- 7
Simmer the beans uncovered, stirring now and then, until the liquid turns into a thick, dark broth, 15-20 min. Add a splash of water if it gets too thick, then taste for salt.
- 8
While the beans simmer, rinse the rice in a sieve until the water runs almost clear, then drain well.
- 9
Bring a kettle of water to a boil.
- 10
Heat the oil in a medium pan over medium heat and fry the rest of the onion and garlic until golden, 2-3 min.
- 11
Add the rice and a pinch of salt and stir for 1 min until every grain is coated and glossy.
- 12
Pour in enough boiling water to cover the rice by a finger's width and bring it back to a boil.
- 13
Turn the heat to low and set the lid on slightly ajar. Cook until the water has disappeared and small holes show on the surface of the rice.
- 14
Take the rice off the heat and leave it covered for 10 min, then fluff it with a fork.
- 15
Remove the bay leaf and serve the rice with a ladle of beans and their broth spooned alongside or on top.
