9 steps
What you need
- 100 g (3.5 oz) bacon, diced
- 3 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200 g (1 1/2 cups) cassava flour, farinha de mandioca, toasted or raw
- 1/2 tsp salt, or to taste
- black pepper, freshly ground, to taste
- 1 handful fresh parsley, chopped
Method
Restated from the original video
- 1
Put the bacon in a cold, wide skillet and set it over medium heat.
- 2
Cook, stirring now and then, until the fat has melted and the pieces are crisp, 6-8 min. The bacon must be cooked through.
- 3
Lift the bacon out with a slotted spoon and leave the fat in the pan.
- 4
Add the butter and let it melt, then add the onion and cook until soft and translucent, 3 min.
- 5
Stir in the garlic and cook until fragrant, about 1 min.
- 6
Turn the heat to low. Add the cassava flour a handful at a time, stirring constantly so it soaks up the fat.
- 7
Keep stirring until the flour is lightly golden and sandy, 3-5 min. Do not walk away, it scorches quickly.
- 8
Return the bacon to the pan, season with salt and pepper, and toss in the parsley.
- 9
Serve warm, next to grilled meat.
