Flaky Stretched Roti Canai Cooked in Ghee
8 ingredients
14 steps
What you need
- 500 g (4 cups) plain flour
- 1 tsp salt
- 1 tbsp sweetened condensed milk
- 1 egg, at room temperature
- 30 g (2 tbsp) unsalted butter, melted
- 250 ml (1 cup) water, at room temperature
- 120 ml (1/2 cup) vegetable oil, for coating the dough balls
- 100 g (1/2 cup) ghee, melted, for stretching and frying
Method
Restated from the original video
- 1
Put the flour, salt, condensed milk, egg and melted butter in a large bowl or the bowl of a stand mixer.
- 2
Add the water gradually, mixing until a soft, slightly sticky dough forms.
- 3
Knead until smooth, shiny and elastic, about 10 min. Cover, rest for 10 min, then knead for 5 min more.
- 4
Divide the dough into 10 equal pieces and roll each into a tight, smooth ball.
- 5
Pour the oil into a container, turn the balls in it until fully coated, then cover tightly. Leave at room temperature for at least 1 hour, or chill overnight and bring back to room temperature for 30 min.
- 6
Smear a clean, smooth work surface with a little ghee. Flatten one ball with your palm, then push outward with the heel of your hand to widen it.
- 7
Lift the edges and pull gently from underneath, working around the round, until the dough is so thin you can nearly see through it. A few small tears do no harm.
- 8
Dab melted ghee over the whole sheet.
- 9
Fold the top and bottom edges over to meet in the middle, then fold in the sides, making a square packet with air trapped between the folds.
- 10
Set the packet aside to rest for 10 min while you stretch the remaining balls.
- 11
Heat a heavy frying pan or tawa over medium-high heat and add 1 tsp ghee.
- 12
Press a packet out lightly to about 15 cm (6 in) and cook until golden and crisp in patches, 1-2 min per side. Add a little ghee for each roti.
- 13
Move the roti to a board and, while still hot, clap it between both hands from the sides toward the centre to loosen and separate the layers. Protect your hands with a cloth if needed.
- 14
Keep the cooked roti under a cloth while you cook the rest, and serve warm with dhal or curry.
