What you need

  • 280 g (10 oz) pork shoulder, with some fat, or pork belly
  • 1 tbsp rice wine, or mirin
  • 1 tsp fresh ginger, grated
  • salt and black pepper, a pinch of each, to taste
  • 5 tbsp chunjang, Korean black bean paste
  • 5 tbsp neutral oil, divided
  • 1 tbsp sugar, plus more to taste
  • 1 tbsp light soy sauce
  • 2 large onions, about 400 g (14 oz), diced
  • 1 medium potato, peeled and diced
  • 1 zucchini, diced
  • 150 g (5 oz) green cabbage, cut into 2 cm (3/4 in) squares
  • 375 ml (1 1/2 cups) chicken stock or water
  • 1 1/2 tbsp potato starch, or cornstarch
  • 600 g (1 1/4 lb) fresh thick wheat noodles, jjajangmyeon or udon noodles
  • 1/2 cucumber, cut into thin matchsticks, for serving

Method

Restated from the original video

  1. 1

Cut the pork into 1.5 cm (1/2 in) cubes. Toss with the rice wine, ginger and a pinch of salt and pepper, and set aside while preparing the vegetables.

  2. 2

Put a large pot of water on to boil for the noodles.

  3. 3

Warm 3 tbsp of the oil in a small saucepan over medium heat. Add the chunjang and sugar and fry, stirring all the time, until glossy and fragrant, 2-3 min. Set aside.

  4. 4

Heat the remaining 2 tbsp oil in a wok or large frying pan over medium-high heat. Stir-fry the pork until no longer pink, 3-4 min, adding the soy sauce halfway.

  5. 5

Add the onions and potato and cook, stirring often, until the onions turn soft and translucent, 4-5 min.

  6. 6

Add the zucchini and cabbage and stir-fry until they start to soften, 2-3 min.

  7. 7

Stir in the fried black bean paste until every piece of meat and vegetable is coated.

  8. 8

Pour in the stock, bring to a boil and simmer until the potato is tender, 5-7 min.

  9. 9

Mix the starch with 4 tbsp cold water. Stir it into the sauce and simmer until thick and shiny, about 1 min. Taste and add a little more sugar if it is sharp.

  10. 10

Boil the noodles until just tender with a firm bite, following the packet time. Drain well.

  11. 11

Divide the noodles among bowls, ladle the hot sauce over and top with the cucumber. Mix everything together at the table.

About jjajangmyeon

Thick wheat noodles tossed in a black bean sauce made from stir-fried chunjang, pork, and onion, thickened until glossy. Savory rather than spicy, with a mild sweetness under the fermented bean flavor.

What cooks argue about

Cooks argue over how long to fry chunjang paste in oil before adding other ingredients, since undercooking leaves a raw, bitter edge while overcooking can burn the sugars and turn the sauce acrid.
