Muddled Lime and Cachaça Caipirinha over Crushed Ice
4 ingredients
7 steps

What you need
- 1 lime, plus a wedge for garnish
- 2 tsp white sugar, superfine if possible
- 60 ml (2 oz) cachaça
- 1 handful crushed ice
Method
Restated from the original video
- 1
Roll the lime firmly on the counter, then trim off both ends.
- 2
Cut it into eighths and slice away the white core running down the centre, which turns the drink bitter.
- 3
Drop the lime pieces into a short, heavy tumbler and sprinkle the sugar over them.
- 4
Press and twist with a muddler or the handle of a wooden spoon until the juice is out and the sugar has mostly dissolved, about 30 seconds. Avoid grinding the peel hard.
- 5
Fill the glass to the top with ice.
- 6
Pour in the cachaça and stir for a few seconds to chill and mix.
- 7
Top up with a little more ice if it has sunk, garnish with the lime wedge and serve with a short straw.
