What you need
- 700 g (1 1/2 lb) sweet potatoes, about 2 large, scrubbed
- 190 g (1 1/2 cups) all-purpose flour
- 175 g (6 oz) unsalted butter, divided: 115 g cold and cubed for the crust, 60 g melted for the filling
- 1/2 tsp salt, divided between crust and filling
- 100 g (1/2 cup) light brown sugar, packed
- 50 g (1/4 cup) granulated sugar
- 2 large eggs
- 150 ml (2/3 cup) evaporated milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Method
Restated from the original video
- 1
Heat the oven to 200 °C (400 °F). Prick the sweet potatoes with a fork, set them on a lined tray and bake until very soft and leaking sticky juices, 50-60 min.
- 2
Meanwhile, rub 115 g (4 oz) of the cold butter and 1/4 tsp of the salt into the flour with your fingertips until the mix looks like coarse crumbs.
- 3
Sprinkle over 4-5 tbsp of ice water, 1 tbsp at a time, until the dough holds when squeezed. Press into a disc, wrap, and chill for 1 hour.
- 4
Roll the dough into a 30 cm (12 in) round. Fit it into a 23 cm (9 in) pie dish, trim the overhang and crimp the edge. Chill for 30 min.
- 5
Take the sweet potatoes out and lower the oven to 190 °C (375 °F). Prick the chilled shell, cover it with parchment, add pie weights and bake for 17-20 min.
- 6
Remove the parchment and weights and bake for 8-10 min more until the crust is pale gold. Lower the oven to 175 °C (350 °F).
- 7
Peel the warm sweet potatoes and mash with the 60 g (2 oz) of melted butter until smooth. You need about 450 g (2 cups).
- 8
Whisk the brown sugar, granulated sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg and the remaining 1/4 tsp of salt in a bowl. Stir into the mash until smooth.
- 9
Pour the filling into the crust. Bake for 45-50 min, until the edges are set and the center jiggles slightly. Cover the crust edge with foil if it browns too fast.
- 10
Cool on a rack for 2 hours before slicing. Serve at room temperature or chilled.
