5 ingredients
8 steps
What you need
- 6 ripe saba bananas, peeled, halved lengthwise
- 100 g (3 1/2 oz) sweetened jackfruit, drained, cut into 12 strips
- 100 g (1/2 cup) brown sugar, plus extra for serving
- 12 sheets lumpia wrappers
- 500 ml (2 cups) neutral oil, for frying
Method
Restated from the original video
- 1
Spread the brown sugar on a plate. Roll each banana half in the sugar until coated and set them on a tray.
- 2
Lay a wrapper on the counter with one corner pointing toward you. Place a banana half across the lower third and a jackfruit strip beside it.
- 3
Fold the bottom corner over the filling, fold in the two side corners and roll up tightly. Brush the last corner with water to seal.
- 4
Repeat with the remaining bananas and wrappers.
- 5
Pour the oil into a wok or small, deep frying pan and heat to 175 °C (350 °F).
- 6
Fry the rolls in batches without crowding, turning once, until the wrapper is blistered and golden and the sugar has caramelized, 2-3 min per side.
- 7
Lift out with tongs and drain on a wire rack. Let them cool for 2-3 min, since the caramel is very hot.
- 8
Serve warm, sprinkled with a little extra brown sugar.
