What you need
- 250 g (9 oz) raw shrimp, peeled and deveined
- 1 egg white
- 2 scallions, finely chopped
- 1 tsp fresh ginger, finely grated
- 1 tsp cornstarch
- 1 tsp soy sauce

- 6 slices white sandwich bread, a day old, crusts removed
- 4 tbsp sesame seeds
- 500 ml (2 cups) neutral oil, for frying
Method
Restated from the original video
- 1
Pat the shrimp dry and chop them roughly. Put them in a food processor with the egg white, scallions, ginger, cornstarch, soy sauce, sesame oil and salt.
- 2
Pulse 10-15 times to a coarse, sticky paste, scraping down the sides once. Do not purée it smooth.
- 3
Cut each slice of bread diagonally into 4 triangles.
- 4
Spread a thick, even layer of the shrimp paste over one side of each triangle, right to the edges.
- 5
Press the paste side into the sesame seeds so it is evenly coated.
- 6
Pour the oil into a wok or small, deep saucepan to a depth of about 2 cm (3/4 in) and heat to 175 °C (350 °F).
- 7
Fry the triangles in small batches, shrimp side down first, until the sesame seeds turn golden, 1-2 min.
- 8
Flip and fry for 30-60 seconds more until the bread is crisp and the shrimp are cooked through.
- 9
Drain on a rack or paper towels and serve hot.
