Madeira Poncha with Sugarcane Spirit, Honey and Lemon
5 ingredients
6 steps
What you need
- 100 ml (scant 1/2 cup) lemon juice, freshly squeezed
- 80 g (1/4 cup) honey, or to taste
- 250 ml (1 cup) aguardente de cana, Madeira sugarcane spirit; white rhum agricole is the closest substitute
- orange juice, optional, a splash to soften it
- lemon peel, optional, for serving
Method
Restated from the original video
- 1
Pour the lemon juice into a jug, with the orange juice if you are using it.
- 2
Add the honey and work it into the juice with a caralhinho, the Madeiran wooden stirring stick, spinning it between your palms. A whisk or long spoon also works.
- 3
Keep stirring until the honey has dissolved completely and none sits at the bottom.
- 4
Pour in the aguardente and stir hard again until the drink turns cloudy and a little foamy.
- 5
Leave it to settle for 10 min so the flavors blend.
- 6
Stir once more and pour into small glasses, each with a strip of lemon peel if you like. Serve well chilled, with a little ice if you like.
