Method
Restated from the original video
- 1
In a large bowl, mix 500 g of the flour with the yeast, 60 g of the sugar and the salt.
- 2
Add the eggs and 200 ml of the lukewarm milk and stir into a rough dough.
- 3
Knead for 8 min, then work in the butter a piece at a time. Knead until smooth and elastic, 5-8 min more. The dough should be soft and slightly tacky.
- 4
Cover and leave in a warm place until doubled, 1-1 1/2 h.
- 5
Line a large baking tray with parchment. Divide the dough into 10 pieces of about 90 g, roll each into a smooth ball and set them 4 cm (1 1/2 in) apart on the tray.
- 6
Cover and leave until puffy, about 40 min. Heat the oven to 180 °C (350 °F) near the end.
- 7
For the topping, heat 250 ml of milk in a saucepan until steaming.
- 8
Whisk the yolks, the remaining 60 g of sugar and the remaining 40 g of flour in a bowl until smooth.
- 9
Whisk the hot milk into the yolk mixture a little at a time, then pour it back into the saucepan.
- 10
Cook over medium-low heat, stirring constantly, until it is thick and bubbling, 3-4 min.
- 11
Take the pan off the heat and stir in the coconut. Let it cool for 10 min, until spreadable.
- 12
Spoon a generous 2 tbsp of the topping over each roll, covering the top completely.
- 13
Bake until the coconut is golden at the edges and the rolls sound hollow when tapped underneath, 20-25 min.
- 14
Cool on a rack and dust with the powdered sugar.
