7 steps
What you need
- 400 g (14 oz) green beans, trimmed, stem ends only
- 150 g (1 1/4 cups) plain flour
- 1 large egg
- 150 ml (2/3 cup) cold lager
- salt, for the water, the batter and finishing
- 750 ml (3 cups) sunflower oil, or light olive oil, for deep-frying
- 1 lemon, cut into wedges
Method
Restated from the original video
- 1
Bring a large pot of water to a boil and salt it well. Cook the beans for 3 min, until bright green and still crisp.
- 2
Drain the beans and chill them in ice water for 2 min. Drain again and dry them thoroughly with a towel, since wet beans shed the batter.
- 3
Whisk the flour, egg, lager and 1/2 tsp salt into a smooth batter that coats the back of a spoon. Rest for 15 min.
- 4
Pour the oil into a wide, deep pot to a depth of 4 cm (1 1/2 in) and heat it to 180 °C (350 °F).
- 5
Gather 3 or 4 beans into a small bundle with the tips together. Dip in the batter, let the excess drip off, and lower into the oil.
- 6
Fry in batches, turning once, until puffed and golden, 2-3 min. Drain on a rack or paper towels and sprinkle with salt right away.
- 7
Serve hot with lemon wedges.
