11 steps
What you need
- 200 ml (3/4 cup + 1 tbsp) water
- 75 g (5 tbsp) butter, cut into pieces
- 2 pieces lemon peel, wide strips, pith removed
- 1/2 tsp salt
- 200 g (1 2/3 cups) all-purpose flour, sifted
- 5 large eggs, lightly beaten
- vegetable oil, for deep-frying
- 100 g (1/2 cup) granulated sugar
- 2 tsp ground cinnamon
Method
Restated from the original video
- 1
Put the water, butter, lemon peel and salt in a saucepan and bring to a boil so the butter melts completely.
- 2
Take out the lemon peel and pull the pan off the heat.
- 3
Tip in all the flour at once and beat hard with a wooden spoon until the dough forms a smooth ball that leaves the sides of the pan.
- 4
Return the pan to low heat and stir for 1-2 min to dry the dough a little.
- 5
Move the dough to a mixing bowl and let it cool for 10-15 min, stirring now and then.
- 6
Beat in the eggs in 5 additions, mixing well after each one, until the dough is glossy and falls from the spoon in a thick ribbon that holds a point.
- 7
Heat oil at least 6 cm (2 1/2 in) deep in a heavy pot over medium heat until a small blob of dough sizzles and rises straight away.
- 8
Dip two spoons in the oil and use them to drop heaped teaspoons of dough into it, a few at a time.
- 9
Fry, turning them, until puffed, cracked and deep golden all over. Prick each one with a fork while it fries so the inside cooks through.
- 10
Lift them onto paper towels to drain.
- 11
Mix the sugar and cinnamon and roll the warm sonhos in it until coated. Serve the same day.
