  • 1 tsp ground cinnamon
  • 3 large eggs, lightly beaten
  • 350 ml (1 1/2 cups) vegetable oil
  • 2 tsp vanilla extract, 1 1/2 tsp in the batter, 1/2 tsp in the frosting

Method

Restated from the original video

  1. 1

Heat the oven to 175 °C (350 °F). Grease three 23 cm (9 in) round cake pans and line the bottoms with parchment.

  2. 2

Combine the flour, cinnamon, baking soda, sugar and salt in a large bowl.

  3. 3

Add the eggs, oil and 1 1/2 tsp of the vanilla. Stir with a spatula just until no dry flour is left.

  4. 4

Fold in the pineapple with its juice, the bananas and half of the pecans. Do not beat, or the cake turns tough.

  5. 5

Divide the batter evenly among the pans and smooth the tops.

  6. 6

Bake for 25-30 min, until a toothpick in the center comes out clean and the tops spring back.

  7. 7

Cool in the pans for 10 min, then turn out onto a wire rack and cool completely, about 1 hour. Frosting a warm cake makes it slide.

  8. 8

Beat the butter and cream cheese with an electric mixer until smooth and creamy, 2 min.

  9. 9

Add the powdered sugar a little at a time on low speed, then beat in the remaining 1/2 tsp vanilla. Increase to medium speed until fluffy, 1-2 min.

  10. 10

Set one layer on a plate and spread with about a quarter of the frosting. Repeat with the second layer, then add the third.

  11. 11

Frost the top and sides with the rest. Press the remaining pecans onto the sides or scatter over the top.

  12. 12

Chill for at least 30 min to set the frosting, then slice. Keep leftovers refrigerated and bring to room temperature before serving.
