10 ingredients
8 steps
What you need
- 450 g (1 lb) onions, halved and sliced thin
- 1 tsp fine salt
- 120 g (1 cup) gram flour
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 1 green chili, finely chopped
- 2 tbsp fresh cilantro, chopped
- 750 ml (3 cups) vegetable oil, for deep-frying
Method
Restated from the original video
- 1
Toss the sliced onions with the fine salt in a large bowl. Leave for 10 min until they release liquid.
- 2
Add the gram flour, cumin, coriander, turmeric, chili powder, green chili and cilantro. Mix with your hands until the onions are coated in a thick paste. Add 1-2 tbsp of water only if the mix will not hold together.
- 3
Heat the vegetable oil in a deep pan to 180 °C (350 °F). A drop of batter should rise and sizzle at once.
- 4
Drop in loose, rough spoonfuls of the mix, 4-5 at a time. Do not crowd the pan.
- 5
Fry, turning now and then, until deep golden and crisp, 4-5 min. Break one open to check that the onion inside is soft and the batter is cooked through.
- 6
Lift out with a slotted spoon and drain on paper towels.
- 7
Let the oil return to 180 °C (350 °F) between batches.
- 8
Serve hot, while still crisp.
