Oven-Charred Broccoli with Garlic and Parmesan
6 ingredients
9 steps
What you need
- 700 g (1 1/2 lb) broccoli, 1 large head
- 3 tbsp olive oil
- 3 cloves garlic, thinly sliced
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper, freshly ground
- 25 g (1/4 cup) parmesan, finely grated
Method
Restated from the original video
- 1
Heat the oven to 220 °C (425 °F) and line a large baking sheet with baking paper.
- 2
Cut the broccoli into florets of about the same size. Peel the thick stalk and slice it into coins.
- 3
Dry the pieces well, since wet broccoli steams instead of browning.
- 4
Put the broccoli on the sheet, add the olive oil, salt and pepper and toss with your hands until every piece is coated.
- 5
Spread it out in one layer with a little space between the pieces.
- 6
Roast for 10 min.
- 7
Scatter the garlic over, toss and roast until the floret tips are deep brown and the stems are just tender, 6-8 min.
- 8
Sprinkle on the parmesan and roast until it melts, about 2 min more.
- 9
Serve hot, straight from the sheet.
