Italian Mixed Fried Seafood with Lemon
7 ingredients
8 steps
What you need
- 300 g (10 oz) squid, cleaned, bodies cut into 1 cm rings, tentacles left whole
- 250 g (9 oz) shrimp, peeled and deveined, tails left on
- 250 g (9 oz) white fish fillet, such as cod or hake, cut into 3 cm pieces
- 120 g (1 cup) all-purpose flour
- 1 l (4 cups) vegetable oil, such as sunflower, for frying
- salt, to taste
- 1 lemon, cut into wedges
Method
Restated from the original video
- 1
Rinse the squid, shrimp and fish under cold water and leave them in a colander to drain for 10-15 min. Pat dry with paper towels.
- 2
Pour the oil into a heavy, deep pot to a depth of about 5 cm (2 in) and heat it to 180 °C (350 °F).
- 3
Turn the oven to its lowest setting and line a tray with paper towels.
- 4
Spread the flour on a plate. Toss a small handful of seafood in it and shake off the excess in a sieve.
- 5
Fry that handful without crowding the pot until pale golden and crisp, 1-2 min for the squid and 2-3 min for the shrimp and fish.
- 6
Lift it out with a slotted spoon onto the tray, sprinkle with salt and keep warm in the oven.
- 7
Repeat with the rest, flouring each batch just before it goes in and letting the oil come back to temperature between batches.
- 8
Pile everything on a warm platter and serve straight away with the wedges.
