3 ingredients
8 steps
What you need
- 6 large eggs, straight from the fridge
- water, enough to cover the eggs by 2.5 cm (1 in)
- ice, for the ice bath
Method
Restated from the original video
- 1
Set a medium pot of water over high heat and wait for a rolling boil.
- 2
Fill a large bowl with ice and cold water.
- 3
Lower the eggs into the boiling water one at a time with a spoon.
- 4
Turn the heat down until the water keeps a steady, gentle simmer, then start a timer.
- 5
Cook for 12 min. This gives fully set whites and pale, firm yolks.
- 6
Move the eggs into the ice bath with a slotted spoon and chill for 10 min.
- 7
Tap each egg on the counter, roll it under your palm to crack the shell all over, then peel from the wide end, under a trickle of cold water if the shell sticks.
- 8
Keep unpeeled eggs in the fridge for up to 1 week. Keep peeled eggs in a sealed container and eat within 3 days.
