3 ingredients
10 steps
What you need
- 150 g (1 cup) sesame seeds, white or black, raw or pre-roasted
- 3 tbsp honey, about 60 g, plus a little more if needed
- 1 pinch fine sea salt
Method
Restated from the original video
- 1
Toast the sesame seeds in a dry pan over medium heat, stirring often, until they smell nutty and begin to pop, 3-5 min. Do not let them scorch.
- 2
Spread the seeds on a plate and cool them completely, about 10 min.
- 3
Grind the cooled seeds in short pulses in a blender or spice grinder until they form a fine, slightly clumpy powder. Stop before it turns into an oily paste.
- 4
Warm the honey for 20 seconds in a small pot over low heat, until it runs freely.
- 5
Mix the sesame powder with the salt in a bowl. Drizzle in the warm honey a spoonful at a time, rubbing it in with your fingertips.
- 6
Stop when the mixture is crumbly and holds together when squeezed in a fist. If it will not hold, add honey a few drops at a time.
- 7
Pack a small piece of the dough firmly into a dasik mold, pressing until it is level with the top.
- 8
Push the cookie out of the mold onto a tray. Repeat with the remaining dough, 20-24 cookies in all.
- 9
No mold: roll the dough into balls of about 1 tbsp, flatten them to 1 cm (1/2 in) discs between two sheets of baking parchment, and press with the back of a fork or a small cookie cutter.
- 10
Let the cookies rest for 15 min to firm up, then serve with hot tea.
