Method

Restated from the original video

  1. 1

Soak the bones in cold water for 2 hours, changing the water twice, to draw out the blood.

  2. 2

Rinse the bones, put them in a large pot with fresh water to cover and boil hard for 10 min.

  3. 3

Drain, rinse the bones under running water and scrub the pot clean.

  4. 4

Return the bones to the pot with the 3 l of water, the rice wine, 1 tbsp of the doenjang, sliced ginger, whole onion half and 2 scallions.

  5. 5

Bring to a boil, skim, then cover and simmer on low heat for 1 hour.

  6. 6

Meanwhile, mix the gochugaru, gochujang, soy sauce, garlic, remaining doenjang, minced ginger and black pepper into a paste.

  7. 7

Blanch the cabbage in boiling water for 2 min, drain and squeeze lightly.

  8. 8

Fish out the onion half and scallions. Stir the paste into the broth and add the potatoes, cabbage and sliced onion.

  9. 9

Simmer, partly covered, until the potatoes are soft and the pork is cooked through, tender and almost falling off the bones, 40-50 min.

  10. 10

Stir in the perilla seed powder, the remaining scallions and the perilla leaves, and simmer 5 min more.

  11. 11

Taste and add salt if needed.

  12. 12

Serve piping hot in large bowls with steamed rice.
