8 steps
What you need
- 120 g (4 oz) small dried anchovies, the thumb-length or smaller kind sold for stir-frying
- 5 cloves garlic, thinly sliced
- 2 tbsp neutral oil
- 1 tbsp mirin
- 1 tsp soy sauce
- 2 tbsp corn syrup, or rice syrup
- 1 tsp toasted sesame oil
- 1 tsp toasted sesame seeds
Method
Restated from the original video
- 1
Put the anchovies in a dry, wide frying pan over medium heat. Stir for 4-5 min, until they feel dry and light and the fishy smell fades.
- 2
Tip the anchovies into a coarse sieve and shake it to drop the crumbs and dust. Wipe the pan clean.
- 3
Return the pan to medium-low heat and add the oil and garlic. Cook, stirring, until the garlic turns pale gold, about 1 min.
- 4
Add the anchovies and toss for 1 min, until every piece is coated with the garlic oil.
- 5
Turn off the heat. Add the mirin and soy sauce and toss to mix.
- 6
Add the corn syrup and set the pan over low heat. Toss for 1-2 min, until the syrup turns glossy and the anchovies cling together lightly.
- 7
Turn off the heat, then stir in the sesame oil and sesame seeds.
- 8
Spread the anchovies on a plate or tray in a single layer and let them cool for 5 min, so they crisp up and do not stick in one lump.
