10 steps
What you need
- 500 g (4 cups) all-purpose flour
- 7 g (2 1/4 tsp) active dry yeast
- 1 tsp sugar
- 320 ml (1 1/3 cups) warm water, lukewarm, about 38 °C (100 °F)
- 2 tsp salt
- 3 tbsp olive oil, divided
- 3 tbsp sesame seeds
Method
Restated from the original video
- 1
Stir the yeast and sugar into the warm water and leave 10 min, until foamy.
- 2
Mix the flour and salt in a large bowl. Add the foamy yeast mixture and 2 tbsp of the olive oil.
- 3
Knead until the dough is smooth and springy and no longer sticks to the bowl, 10 min by hand or 7 min with a dough hook.
- 4
Rub a clean bowl with the remaining oil. Turn the dough in it, cover and leave in a warm spot until doubled, 1-1 1/2 hours.
- 5
Heat the oven to 200 °C (400 °F) and line two baking trays with parchment.
- 6
Divide the dough in two. On a floured surface, roll each piece into an uneven oval about 1 cm (1/2 in) thick.
- 7
Lift the ovals onto the trays, cover loosely and rest 15-20 min.
- 8
Press your fingertips into the dough all over to make dimples. Brush with water and sprinkle with the sesame seeds.
- 9
Bake until golden, 15-20 min. The bottom should sound hollow when tapped.
- 10
Cool on a rack. Serve the same day, torn into pieces.
