Method
Restated from the original video
- 1
Heat the oven to 180 °C (350 °F). Grease a 24 cm (9 1/2 in) ring tin or bundt tin with the butter, then dust it with the 1 tbsp of flour and tap out the excess.
- 2
Whisk the eggs with the sugar for 3-4 min, until pale and thick.
- 3
Whisk in the oil, milk and lemon zest.
- 4
Sift the remaining flour with the baking powder and salt into the bowl. Fold gently until just smooth, with no dry streaks.
- 5
Pour the batter into the tin and level the top.
- 6
Bake for 40-45 min, until the cake is golden and a skewer inserted in the centre comes out clean.
- 7
Cool in the tin for 10 min, then turn out onto a rack and let it cool completely, about 30 min.
- 8
Dust with icing sugar before slicing.
