Simple Italian Tomato Sauce with Garlic and Basil

5 ingredients

8 steps

What you need

  • 800 g (28 oz) canned whole peeled tomatoes, with their juice
  • 4 tbsp extra virgin olive oil
  • 3 garlic cloves, peeled and lightly crushed
  • 8 leaves fresh basil
  • 1 tsp salt, plus more to taste

Method

Restated from the original video

  1. 1

Tip the tomatoes into a bowl and squeeze them by hand into rough chunks.

  2. 2

Pour the olive oil into a wide saucepan, add the garlic and set the pan over medium-low heat.

  3. 3

Let the garlic sizzle gently until it smells sweet and turns pale gold, 3-4 min. Pull the pan off the heat if it starts to brown.

  4. 4

Add the tomatoes with all their juice, the salt and half the basil.

  5. 5

Bring to a steady bubble, then lower the heat so the sauce barely simmers.

  6. 6

Cook uncovered, stirring now and then, until the sauce has thickened and a little oil shows on the surface, 25-30 min.

  7. 7

Lift out the garlic for a mild sauce, or mash it into the tomatoes for a stronger one.

  8. 8

Taste and add more salt if needed. Tear in the remaining basil just before serving.

About tomato sauce

Crushed tomatoes simmered with garlic, onion, basil, and olive oil until they cook down into a smooth, thick sauce. It's meant as a base for pasta or other dishes rather than a finished plate on its own.

What cooks argue about

Simmer time is the central fight: a short cook keeps the tomato bright, a long simmer deepens flavor but can turn the sauce flat and overly sweet.
