11 ingredients

13 steps

What you need

  • 2.2 kg (5 lb) whole duck, neck and wing tips trimmed, excess fat removed
  • 1 tsp salt
  • 1/2 tsp Chinese five-spice powder
  • 3 tbsp honey, or maltose
  • 2 tbsp Shaoxing wine, or dry sherry
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 20 Mandarin pancakes, store-bought or homemade
  • 6 scallions, white and pale green parts cut into thin 6 cm strips
  • 1 cucumber, cut into thin 6 cm batons
  • 120 ml (1/2 cup) sweet bean sauce, tianmianjiang, or hoisin sauce, for serving

Method

Restated from the original video

  1. 1

Pat the duck dry inside and out. Rub the salt and five-spice inside the cavity only.

  2. 2

Set the duck on a rack in the sink and pour a full kettle of boiling water slowly over the skin, turning it so every part is scalded. The skin will tighten. Pat dry.

  3. 3

Bring the honey, wine, vinegar and soy sauce to a simmer in a small pan, stirring until smooth, about 1 min.

  4. 4

Brush the hot glaze all over the skin in a thin, even coat.

  5. 5

Stand the duck on a rack over a tray, breast up, and refrigerate uncovered for 24 hours. The skin should feel dry and papery.

  6. 6

Take the duck out 30 min before roasting. Preheat the oven to 200 °C (400 °F).

  7. 7

Pour 2 cm of water into a roasting tin and set the duck on a rack above it, breast up. Roast for 30 min.

  8. 8

Lower the oven to 175 °C (350 °F), turn the duck breast side down and roast for 30 min.

  9. 9

Turn it breast up again, raise the oven to 220 °C (425 °F) and roast until the skin is deep mahogany and crisp, 15-20 min. Check that the thickest part of the thigh reads 74 °C (165 °F) inside.

  10. 10

Rest the duck for 10 min.

  11. 11

Meanwhile, steam the pancakes until soft and pliable, 3-5 min, and keep them covered.

  12. 12

Carve the crisp skin off first in small pieces, then slice the meat thinly.

  13. 13

Serve with the pancakes, scallions, cucumber and sweet bean sauce. Spread a little sweet bean sauce on a pancake, add duck, skin, scallions and cucumber, and roll it up.

About peking duck

A whole duck air dried and roasted until the skin turns deep mahogany and crackling, carved and rolled into thin pancakes with scallion and hoisin.

What cooks argue about

Cooks argue over hanging the duck to air dry for a full day before roasting versus pumping air under the skin to separate it from the fat quickly.
