What you need

  • 6 fresh bratwurst, raw, not precooked
  • 2 large onions, thinly sliced
  • 2 tbsp neutral oil, plus a little for the grill
  • 6 crusty bread rolls
  • medium-hot German mustard, for serving
  • salt, to taste

Method

Restated from the original video

  1. 1

Take the bratwurst out of the fridge about 30 min before cooking.

  2. 2

Set up the grill for two zones: one side at medium heat, about 180 °C (350 °F), the other side unlit. Oil the grates.

  3. 3

Meanwhile, heat the oil in a frying pan over medium heat. Add the onions with a pinch of salt and cook, stirring often, until soft and golden brown, 15-20 min. Keep warm.

  4. 4

Lay the bratwurst on the unlit side, close the lid and cook, turning a few times, until they feel firm, about 15 min.

  5. 5

Move them over the direct heat and grill, turning often, until the skins are browned and crisp, 4-5 min. Do not pierce them.

  6. 6

Check that the bratwurst are cooked through: a thermometer in the center should read 71 °C (160 °F).

  7. 7

Split the rolls and warm them cut side down on the grill for 30 seconds.

  8. 8

Tuck a bratwurst into each roll, spoon over the onions and serve with mustard.

About bratwurst

A fresh pork or veal sausage seasoned with nutmeg, ginger or marjoram depending on region, grilled or pan fried and served in a roll with mustard.

What cooks argue about

Parboiling the sausage in water or beer before grilling renders fat and guarantees it cooks through, but some cooks call that a shortcut that steams away flavor and grill it raw instead.
