11 steps

What you need

  • 150 g (3/4 cup) idli rice, or any short-grain parboiled rice
  • 75 g (1/3 cup) chana dal, split chickpeas
  • 60 g (1/4 cup) toor dal, split pigeon peas
  • 30 g (2 tbsp) red lentils, masoor dal
  • 15 g (1 tbsp) urad dal, split black gram
  • 4 dried red chillies
  • 1/2 tsp asafoetida
  • 1 onion, small, finely chopped

  • 1 tsp salt, or to taste
  • 5 tbsp oil, for cooking
  • coconut chutney, to serve
  • butter, to serve

Method

Restated from the original video

  1. 1

Rinse the rice and soak it in plenty of cold water. Rinse all the dals and red lentils together and soak them in a separate bowl of cold water. Leave both for 4-5 hours.

  2. 2

Drain the dals and lentils. Grind them with the chillies and asafoetida, adding only 2-3 tbsp water, into a rough, slightly gritty paste. Scrape into a large bowl.

  3. 3

Drain the rice and grind it with 60-80 ml water to a coarse, grainy paste. It should feel like coarse sand.

  4. 4

Mix both pastes together. Stir in the salt, curry leaves and onion.

  5. 5

Add water a splash at a time until the batter is thick but pourable, like pancake batter that drops slowly off a spoon.

  6. 6

Heat a cast iron or heavy non-stick pan over medium heat until a drop of water sizzles on it. Brush with a little oil.

  7. 7

Pour a ladle of batter (about 100 ml) into the centre and spread it gently into a circle about 15-18 cm across. Keep it thick.

  8. 8

Drizzle 1/2 tsp oil around the edge and into a small dent pressed in the centre.

  9. 9

Cook over medium-low heat until the underside is golden and the edges turn crisp, 3-4 min. Flip and cook 2-3 min more, until golden in spots and cooked through.

  10. 10

Repeat with the remaining batter, stirring it before each pancake and oiling the pan again.

  11. 11

Serve hot straight from the pan, with coconut chutney and a spoon of butter.
