Method

Restated from the original video

  1. 1

Toss the chicken with the turmeric, lime juice and 1 tsp of the salt. Leave it for 20 min.

  2. 2

Set a dry frying pan over medium heat. Toast the chilies, coriander seeds, cumin, peppercorns, fennel, cloves, cinnamon, cardamom and star anise, stirring, until fragrant and a shade darker, 2-3 min. Add the poppy seeds for the last 30 seconds, then transfer it all to a blender.

  3. 3

Toast the coconut in that pan, stirring, until golden brown, 4-5 min. Transfer it to the blender.

  4. 4

Add the garlic, ginger, nutmeg, tamarind and 200 ml (3/4 cup) water. Blend to a smooth, thick paste.

  5. 5

Heat the oil in a wide heavy pot over medium heat. Cook the onions, stirring, until deep golden, 10-12 min.

  6. 6

Add the chicken and cook, stirring, for 5 min.

  7. 7

Stir in the paste and the remaining 1/2 tsp salt. Fry for 3-4 min, until the paste darkens and smells toasty. Pour in 200 ml (3/4 cup) water.

  8. 8

Bring to a boil, then lower the heat and simmer partly covered, stirring now and then, until the chicken reaches 74 °C (165 °F) inside and oil shows at the edges of the gravy, 30-35 min. Add a splash of water if the gravy gets too thick to move.

  9. 9

Taste for salt. Scatter with coriander and serve hot with rice.
