6 ingredients
9 steps
What you need
- 250 g (about 2 cups) roasted rice flour, sold as puttu podi
- 1/2 tsp salt
- 120 ml (1/2 cup) warm water, about, added a little at a time
- 120 g (1 1/3 cups) grated fresh coconut, or unsweetened frozen, thawed
- 2 ripe bananas, sliced, for serving
- 2 tbsp sugar, for serving
Method
Restated from the original video
- 1
Mix the rice flour and salt in a wide bowl.
- 2
Sprinkle over 2 tbsp warm water at a time, rubbing the flour between your fingers after each addition.
- 3
Stop when the flour is damp and crumbly. A handful squeezed tightly should hold its shape, then crumble when poked.
- 4
Mix in about a third of the coconut, then rest the mixture 10-15 min.
- 5
Fill the water chamber of a puttu steamer about halfway and bring it to a boil.
- 6
Drop the perforated disc into the puttu mold. Add 2 tbsp coconut, then fill with flour mixture to two-thirds. Add another 2 tbsp coconut, then more mixture to the top. Level it without pressing hard.
- 7
Cover the mold with its lid and set it on the steamer. Steam over high heat until steam streams out of the top holes, about 5-6 min, then 3-4 min more.
- 8
Turn off the heat. Push the cylinder out onto a plate with the stick that comes with the mold.
- 9
Repeat with the remaining mixture. Serve hot with sliced bananas and a sprinkle of sugar, or with kadala curry.
