- ice, for serving
Method
Restated from the original video
- 1
Rinse the tarragon well and shake it dry.
- 2
Blend the tarragon with the sugar to a wet green paste. Without a blender, chop the leaves very finely and grind them with the sugar.
- 3
Pour the water over the paste, stir and leave to steep until it cools to room temperature, about 20 min.
- 4
Line a sieve with three or four layers of cheesecloth and strain the mixture, squeezing hard to get out every drop of green liquid.
- 5
Stir in the juice of the lemon and lime. This concentrate keeps for about a week in a sealed jar in the fridge.
- 6
Just before serving, mix the concentrate with the sparkling water and pour over ice.
