What you need

Method
Restated from the original video
- 1
Slide the tofu out of its package onto a plate lined with paper towel, handling it gently so it stays whole.
- 2
Leave it to drain in the fridge for 10 min, so it stays cold.
- 3
Slice the scallions thinly and grate the ginger.
- 4
Cut the tofu in half and set each piece in a small shallow bowl, or cut into cubes.
- 5
Top with the ginger, scallions and bonito flakes.
- 6
Pour the soy sauce around the tofu, not over the top, and serve straight away.
