Crisp Folded Fortune Cookies with Paper Messages

8 ingredients

12 steps

What you need

  • 2 large egg whites
  • 1/2 tsp vanilla extract
  • 3 tbsp vegetable oil
  • 1 tbsp water
  • 60 g (1/2 cup) all-purpose flour
  • 100 g (1/2 cup) granulated sugar
  • 1 1/2 tsp cornstarch
  • 1/4 tsp salt

Method

Restated from the original video

  1. 1

Write or print 12 short fortunes on strips of paper about 1 x 8 cm.

  2. 2

Heat the oven to 160 °C (325 °F). Cover a flat tray with parchment or a silicone liner.

  3. 3

Sift the flour, sugar, cornstarch and salt into a bowl.

  4. 4

In a second bowl, whisk the whites just until foamy, then whisk in the oil, water and vanilla extract.

  5. 5

Pour the wet mixture into the dry one and whisk into a smooth, lump-free batter.

  6. 6

Drop level tablespoons of batter onto the tray, 3-4 at a time only. Spread each into a thin, even 10 cm (4 in) circle with the back of a spoon, keeping the middle no thicker than the rim.

  7. 7

Bake until the rims turn golden brown and the centres are still pale, 8-10 min.

  8. 8

Working fast, lift one cookie with a thin spatula, lay a fortune across the middle and fold it into a half-moon. Pinch the curved edges together.

  9. 9

Press the middle of the folded side against the rim of a mug so the two tips bend down toward each other. Stand it in a small cup or an egg carton hollow so it keeps the shape while it cools. The cookies are very hot, so cotton gloves help.

  10. 10

Shape the rest of the batch the same way before they harden. If one gets too stiff to fold, put the tray back in the oven for 1 min.

  11. 11

Bake and shape the remaining batter in small batches.

  12. 12

Let the cookies cool completely so they turn crisp, then keep them in an airtight tin for up to 1 week.

About fortune cookie

A thin, crisp wafer folded around a paper fortune while still hot, lightly sweetened with vanilla.

What cooks argue about

Cooks argue over folding the wafer by hand while it is still hot enough to bend, since a wafer that cools even slightly cracks instead of folding.
