7 steps
What you need
- 450 g (1 lb) baby bok choy, halved lengthwise
- 2 tbsp peanut oil
- 3 cloves garlic, thinly sliced
- 1 cm fresh ginger, cut into thin matchsticks
- 1 tbsp oyster sauce
- 1/4 tsp salt
- 1/2 tsp sugar
- 1 tsp toasted sesame oil
Method
Restated from the original video
- 1
Rinse the bok choy, spreading the leaves at the base to wash out any sand. Shake it dry.
- 2
Stir the oyster sauce, salt and sugar with 3 tbsp water in a small bowl.
- 3
Heat a wok over high heat until it just starts to smoke, then add the peanut oil.
- 4
Add the garlic and ginger and stir for 10-15 seconds until fragrant. Do not let them brown.
- 5
Add the bok choy and stir-fry until the leaves wilt and turn bright green, 1 min.
- 6
Pour in the sauce, toss, cover and cook until the stems are tender but still crisp, 1-2 min.
- 7
Take the wok off the heat, drizzle with the sesame oil and serve at once.
