Golden Pan-Fried Ripe Plantain Slices
3 ingredients
7 steps
What you need
- 2 large ripe plantains, skin yellow with plenty of black spots
- 150 ml (2/3 cup) vegetable oil
- fine salt, to taste
Method
Restated from the original video
- 1
Cut the ends off each plantain. Slit the peel lengthwise along one ridge and pull it away.
- 2
Slice the plantains on a slight diagonal into pieces about 1 cm (1/2 in) thick.
- 3
Pour the oil into a wide, heavy frying pan and heat it to 160 °C (325 °F). A slice dropped in should sizzle steadily without spitting.
- 4
Fry the slices in batches, leaving space between them, 2-3 min per side. They are done when deep golden brown with darker caramelized edges.
- 5
Lower the heat if the slices darken faster than that. The sugar in ripe plantain scorches quickly.
- 6
Lift the slices out with a slotted spoon onto paper towels.
- 7
Sprinkle with salt while still hot and serve warm.
