9 steps
What you need
- 1.2 kg (8 cups) seedless watermelon flesh
- 1/2 small red onion
- 2 tbsp lemon juice, or lime juice
- 180 g (6 oz) feta
- 1 handful fresh mint leaves, about 15 g (1/2 cup)
- 4 tbsp extra virgin olive oil
- black pepper, freshly ground, to taste
- flaky salt, to taste
Method
Restated from the original video
- 1
Cut the watermelon into bite-size cubes of about 2.5 cm (1 in), discarding any seeds.
- 2
Slice the onion into thin half-moons.
- 3
Toss the onion with the lemon juice in a small bowl and leave it for 5 min to soften its bite.
- 4
Break the feta into rough chunks.
- 5
Tear the mint leaves, keeping a few small sprigs whole for the top.
- 6
Spread the watermelon over a wide platter.
- 7
Scatter over the onion with its juice, then the feta and the torn mint.
- 8
Drizzle with the olive oil and finish with pepper and a little salt, going easy as feta is already salty.
- 9
Top with the reserved mint sprigs and serve straight away, while the melon is cold.
