Method

Restated from the original video

  1. 1

Stir the flour, salt, yeast and caster sugar together in a large bowl.

  2. 2

Mix the warm milk, melted butter and egg, then pour into the flour and stir to a soft, slightly sticky dough.

  3. 3

Knead on a floured surface for 10 min, or 5-7 min in a mixer with a dough hook, until smooth and elastic.

  4. 4

Put the dough in an oiled bowl, cover and leave in a warm place until doubled in size, 1-1 1/2 hours.

  5. 5

Grease a 23 cm (9 in) square baking pan and line it with parchment.

  6. 6

Mix the brown sugar and cinnamon in a small bowl.

  7. 7

    Roll the dough on a floured surface into a rectangle about 30 x 40 cm (12 x 16 in).

  8. 8

Spread the softened butter over the dough to the edges, then sprinkle with the cinnamon sugar and the currants.

  9. 9

Roll up tightly from a long edge into a log. Trim the ends, then cut into 12 equal slices.

  10. 10

Set the slices cut side up in the pan, in 3 rows of 4, with a small gap between them.

  11. 11

Cover and leave to rise until puffed and touching, 30-40 min. Heat the oven to 190 °C (375 °F) meanwhile.

  12. 12

Bake until deep golden on top and cooked through, 25-30 min.

  13. 13

Warm the golden syrup for 15 seconds in the microwave and brush it over the hot buns.

  14. 14

Cool in the pan for 10 min, then pull the buns apart to serve.
