8 ingredients

14 steps

What you need

  • 1.5 kg (3 lb 5 oz) pork loin with rind, boneless, rind on
  • 2 tsp fine salt
  • 1/2 tsp black pepper, freshly ground
  • 3 bay leaves
  • 6 whole cloves
  • 500 ml (2 cups) meat stock, hot
  • 3 shallots, sliced
  • 2 tbsp plain flour, for the gravy

Method

Restated from the original video

  1. 1

Heat the oven to 160 °C (325 °F). Score the rind in lines 1 cm (1/2 in) apart, cutting through the rind and fat but not into the meat. Skip this if the butcher already did it.

  2. 2

Set the roast rind-side down in a roasting tin and pour in boiling water to a depth of 2 cm (3/4 in). Put it in the oven for 20 min to loosen the rind.

  3. 3

Lift out the roast and pour away the water. Scrape the rind clean with a sharp knife, then dry the roast thoroughly with paper towels.

  4. 4

Rub the salt and pepper into the meat and rind, working the salt down into the cuts.

  5. 5

Push the bay leaves and cloves into the scored rind.

  6. 6

Set the roast rind-side up on a rack over the dry tin and roast on the lowest shelf at 160 °C (325 °F).

  7. 7

After 30 min, pour the hot stock into the tin and add the shallots.

  8. 8

Roast for another 60 min, until the thickest part of the meat reads 65 °C (150 °F).

  9. 9

Pour the juices from the tin into a saucepan and set them aside for the gravy. Raise the oven to 250 °C (480 °F).

  10. 10

Return the roast to the oven with the door slightly open. Cook until the rind swells, blisters and turns crisp, 5-15 min, watching closely so it does not burn.

  11. 11

Rest the roast uncovered for 15-20 min.

  12. 12

For the gravy, strain the juices and skim off the excess fat. Shake the flour with 100 ml cold water in a jar until smooth.

  13. 13

Bring the juices to a boil, whisk in the flour mixture and simmer for 5 min. Season with salt and pepper.

  14. 14

Pull out the bay leaves and cloves. Slice the roast thickly, give each plate a piece of crackling and serve with the gravy.
