German Glühwein with Orange, Clove and Star Anise

7 ingredients

7 steps

What you need

  • 750 ml (1 bottle) dry red wine
  • 1 orange, unwaxed
  • 1/2 lemon, unwaxed
  • 2 cinnamon sticks
  • 6 whole cloves
  • 2 star anise
  • 3 tbsp sugar, or to taste

Method

Restated from the original video

  1. 1

Scrub the orange and lemon under hot water and cut both into thin rounds.

  2. 2

Press the cloves into the peel of a few orange rounds so they are easy to remove later.

  3. 3

Pour the wine into a saucepan and add the sugar, cinnamon, star anise and all the citrus.

  4. 4

Set over low heat and stir until the sugar has dissolved.

  5. 5

Cover and hold just below a simmer for 20-30 min so the spices infuse. A few small bubbles at the edge are fine; a rolling boil drives off the alcohol and turns the spices harsh.

  6. 6

Taste and stir in a little more sugar if wanted.

  7. 7

Ladle through a sieve into heatproof glasses or mugs and add one warm orange round to each. Serve hot.

About glühwein

Red wine heated with cinnamon, cloves, orange and sugar, served hot as a drink for cold-weather markets and gatherings.

What cooks argue about

Some cooks tie the spices into a sachet so they can be lifted out cleanly; others let cinnamon and cloves float loose in the pot and strain the wine before serving for a stronger steep.
